The biggest earthquake to strike the Hispaniola region in more than 200 years struck just off the coast of Haiti yesterday afternoon. The magnitude 7.0 tremor destroyed thousands of buildings from hospitals to hotels, even the presidential palace. Communications make it difficult to evaluate all the damage, which is expected to be devastating. Haiti is already the poorest country in the Western Hemisphere. Port-au-Prince, the nation’s capitol city, is home to 2-million people. For news updates throughout the day, tune in FOX News/Talk 1430 WXNT.

If you don’t follow me on Twitter or Facebook (@producerweedman), you don’t know that I cook almost every night. Besides radio, cooking is my other passion. Alot of the time, they are things that I came up with on my own. Every week, I’ll post another recipe and if done right, you should love it!
PIZZA STUFFED MUSHROOMS
Ingredients
16-20 Mushrooms
1 Cup Sausage Cooked (approx 1/2 a roll)
1/4 Cup Green Bell Pepper
1/4 Cup White or Yellow Onion
3 Tbsp Pizza Sauce
1 Clove Garlic
1 Tbsp Pizza Seasoning
1 Tsp Crushed Red Pepper (Optional)
1 Cup of Shredded Mozzarella Cheese
1/2 Cup of Grated Parmesan Cheese
Set your Oven to 400 Degrees. In a chopper or Food Processor, put the Sausage, Green Pepper, Onion, Garlic, Pizza Sauce, Pizza Seasoning, and Crushed Red Pepper and pulse until it is finely chopped. It should be a nice paste, if it isn’t, add another tbsp of Pizza Sauce. Let this sit for about 10 minutes. While waiting, take and remove all the stems from the Mushrooms you are using. Now take and put the mushrooms (stem-side up) on a lightly oiled pan or you can use a MINI MUFFIN Pan, which is what I do (they are a little less watery).
Take the sausage mixture and fill the mushroom caps until they are full, don’t worry if there is some overflowing, it will be fine. Place in the oven and cook for about 15-20 minutes, until the mixture in the mushrooms is nice and brown. Remove from the oven and sprinkle with Mozzarella and Parmesan Cheese and cook for another 5 minutes. Remove from the oven and let them sit for 3-5 minutes and enjoy!
